Ingredients:
1 cup cashews
8 medjool dates, pitted
1 cup desiccated coconut
1 lemon, juice & rind
1 pinch salt
½ cup desiccated or shredded coconut
Method:
- In a food processer, blend all ingredients until a rough paste forms. Depending on how much juice is in the lemon you may need to add additional lemon juice or water to bring the mixture together.
- Form in to 18 balls. Coat in coconut.
- Put in fridge to set.
